So much for just doing weekday posts. But I guess we can’t go without food on the weekends. What kind of mom/wife am I? Tonight I made Giada’s (btw…I do not work for nor have any affiliation with Giada. I just like her book.) Butternut Squash Risotto and broiled some asparagus as a side dish. It’s your basic risotto recipe except it calls for a vanilla bean which is simmered in the broth along with the butternut squash. The vanilla is subtle and is a nice complement to the squash.
As soon as I took the asparagus out of the oven, the smoke alarm goes off and my DH rushes to the bathroom with DD to wash up her massive spit up. I’m frantically waving a magazine in front of the alarm. I quickly cleaned the spit up on the floor only after my DS ran through it. Needless to say, the risotto had lost a bit of its creaminess, but what could I do. I plated the risotto. DH loved it. DS had several bites, but didn’t care for the squash after a couple of bites. DS initially refused the asparagus, but tried one after he saw us inhaling a few spears. I have to say that this is another plus for Giada.
