It’s my first night off. Well, it was pouring all afternoon and it was enough to dissuade me from going to the grocery store. Plus, my 6 mo DD was feeling a little under the weather. Anyway, my DH picked up an extra large veggie pie from Goat Hill Pizza on the way home from work. Nothing beats NYC pizza, but their sourdough crust really makes this pizza unique. And my 2 yo DS loves it! I felt compelled to make something so I chopped up whatever veggies I had in the fridge…a zucchini, and a bagful of cremini mushrooms. I made a vinegarette of olive oil, champagne vinegar, dried thyme, oregano, and salt and pepper. The chopped veggies were sauteed in butter and olive oil and I threw in a handful of cherry tomatoes at the end. I poured the vinegarette into the mix and served it alongside the pizza. Unfortunately, DS only ate one chunk of the zuke, but had two slices which had enough veggies that I didn’t feel completely guilty. The tang from the vinegar was mellowed out by the heat from the veggies. The vinegarette went particularly well with the mushrooms. We sopped up the remaining veggie juice with our pizza crusts. Yum!
