Chicken Cutlet in Foil with Mushrooms & Shallot Cream Sauce #WeekdaySupper #SauteExpress

www.kimchimom.comLast minute guest coming over for dinner? Here’s a dish that fits the bill in about 20 minutes. The other perk is that you can virtually substitute whatever vegetables you have on hand. Just make sure that they are either julienned or thinly sliced before you add them to the pocket.

Notes: You can buy chicken cutlets or you can take 1 breast of chicken and cut it in half lengthwise to get 2 cutlets. You can make these packets up to 3 hours ahead of time.

Chicken Cutlet in Foil with Mushrooms & Shallot Cream Sauce

Makes 2 servings

2 chicken cutlets
1 sqaure of Garlic & Herb Sauté Express® Sauté Starter
8-10 asparagus spears, washed and trimmed OR a handful of baby spinach leaves
1/2 cup thinly sliced mushrooms
2 Tablespoons finely chopped shallots
2 Tablespoons chicken broth
4 Tablespoons heavy cream

1 – Preheat the oven to 450°F.

2 – Cut a piece of aluminum foil that measures about 18″ x 18″.

3 – Smear half a square of the Sauté Express® Sauté Starter in the center of one-half of the foil. Lay 4-5 asparagus spears (or spinach) on top of the Sauté Starter. Next layer 1/4 cup of the mushrooms and 1 tablespoon of shallots on top. Lay one chicken cutlet on top of all the vegetables. Spoon the 1 tablespoon of broth and 2 tablespoons of cream over everything.

4 – Fold the other half of the foil over the chicken. Crimp the edges tight to prevent any leaking.

5 – Repeat assembly for the other cutlet.

6 – Place the foil packets on a rimmed baking sheet and pop it into the oven. Bake for about 20 minutes.

7 – Slit the foil away from you. The steam will be hot! Make sure the internal temperature of the chicken is 160-165°F then you know it’s done.

8 – Slide the chicken and vegetables onto a plate. Spoon the remaining sauce over the chicken.
